Not to make it too easy on myself, I decided to make up my own recipe for the filling. So this recipe was two experiments in one.<\/p>\n<h3>Pastry<\/h3>\n<p>I used the all-butter P\u00e2te Bris\u00e9e recipe from <a href=\"http:\/\/www.simplyrecipes.com\/recipes\/perfect_pie_crust\/\" target=\"_blank\" rel=\"noopener\">this site<\/a>. I cut the butter into about 1\/4&#8243; cubes &#8211; much smaller chunks than shown in the recipe, and probably more work than was necessary. I stored the butter chunks in the freezer while I was preparing everything else. The dough came together quickly in the food processor, though at the time I was worried that I&#8217;d added a bit too much water. In the end, it turned out very buttery, crisp, and flaky.<\/p>\n<h3>Filling<\/h3>\n<p><a href=\"http:\/\/edp.casadelospantalones.com\/wp-content\/uploads\/2017\/12\/20171209_233723.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-111\" src=\"http:\/\/edp.casadelospantalones.com\/wp-content\/uploads\/2017\/12\/20171209_233723-300x169.jpg\" alt=\"\" width=\"300\" height=\"169\" srcset=\"http:\/\/edp.casadelospantalones.com\/wp-content\/uploads\/2017\/12\/20171209_233723-300x169.jpg 300w, http:\/\/edp.casadelospantalones.com\/wp-content\/uploads\/2017\/12\/20171209_233723-768x432.jpg 768w, http:\/\/edp.casadelospantalones.com\/wp-content\/uploads\/2017\/12\/20171209_233723-1024x576.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<ul>\n<li>about 2 cups each of carrots and potatoes, 1\/2 inch dice<\/li>\n<li>about 1 cup of frozen peas<\/li>\n<li>3 boneless, skinless chicken thighs, cut into small chunks<\/li>\n<li>14 ounce can of coconut milk<\/li>\n<li>4 ounce can of massaman curry paste<\/li>\n<\/ul>\n<p>I cooked the curry paste in half the coconut milk for about 5 minutes, then added the chicken and the rest of the coconut milk. After cooking for a couple more minutes I added the carrots and potatoes and cooked until the vegetables were tender.
