{"id":179,"date":"2018-10-15T11:42:25","date_gmt":"2018-10-15T18:42:25","guid":{"rendered":"http:\/\/edp.casadelospantalones.com\/?p=179"},"modified":"2019-04-08T16:44:01","modified_gmt":"2019-04-08T23:44:01","slug":"eritrean-shrimp-thingie","status":"publish","type":"post","link":"http:\/\/edp.casadelospantalones.com\/?p=179","title":{"rendered":"Eritrean Shrimp Thingie"},"content":{"rendered":"<p>From an old NYT restaurant review (I doubled it):<\/p>\n<div><a href=\"https:\/\/www.nytimes.com\/1999\/02\/24\/dining\/a-culinary-journey-out-of-africa-into-new-haven.html\">https:\/\/www.nytimes.com\/1999\/02\/24\/dining\/a-culinary-journey-out-of-africa-into-new-haven.html<\/a><\/div>\n<div><\/div>\n<div>4 tablespoons olive oil<\/div>\n<div>3 medium red onions, thinly sliced<\/div>\n<div>4 to 6 cloves garlic, minced<\/div>\n<div>5 very ripe and juicy tomatoes, chopped coarsely<\/div>\n<div>Salt and freshly ground black pepper, to taste<\/div>\n<div>1\/2 cup finely chopped fresh basil (1 bunch)<\/div>\n<div>15 pitted dates ( 1\/2 cup), cut crosswise in thirds<\/div>\n<div>3 tablespoons unsweetened shredded coconut<\/div>\n<div>1\/2 cup half-and-half<\/div>\n<div>1 pound medium shrimp (16 to 20), shelled and deveined<\/div>\n<div>2\/3 cup grated Parmesan cheese<\/div>\n<div>2 1\/2 cups cooked basmati rice<\/div>\n<div><\/div>\n<div>1. In a large, heavy pot, heat olive oil over medium heat. Add onions, and saute until wilted, about 10 minutes. Add garlic, and continue sauteing, stirring frequently to prevent sticking, for 2 minutes longer. Stir in the tomatoes, salt and pepper. Cover, and cook for about 5 minutes. [Uh, more like 25 minutes&#8230; -Ed.]<\/div>\n<div><\/div>\n<div>2. Add basil, dates and coconut, and reduce heat to medium-low. Cook, uncovered, stirring occasionally, for 5 more minutes. Add the half-and-half, cover and cook for 3 minutes.<\/div>\n<div><\/div>\n<div>3. Add shrimp to sauce. Cook, covered, until shrimp turns pink, about 5 minutes.
